Sweet juicy and delicious – make sure your pineapple is fresh and perfectly ripe.

3 cups pineapple pieces frozen – use fresh pineapple and freeze prior.
180ml Blind Tiger Organic Gin
60ml simple syrup
30ml pineapple juice
30ml fresh lime juice
Combine gin, simple syup, lime and pineapple juices in a large jug and stir. Add frozen pineapple pieces and quickly blitz with a stick blender. Distribute evenly amongst six tall glasses and top with crushed ice and soda water.
